  • 0.5 teaspoons black pepper (freshly ground)
  • 250 milliliters vegetable broth
  • 2 liters water
  • 1 tablespoon coarse salt (for pasta water)

Directions

Step 1

Bring 2 liters of water to a boil in a large pot. Add 1 tablespoon of coarse salt to the boiling water.

Cook the ziti pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.

In a large skillet, heat 3 tablespoons of extra-virgin olive oil over medium heat.

Add the chopped yellow onion to the skillet and sauté for 3-4 minutes, or until softened.
