Trim the baby bok choy by removing any tough outer leaves. Slice each head lengthwise into quarters. Rinse thoroughly under cold water to remove dirt, and drain well.
Peel and finely mince the garlic. Peel and finely grate the fresh ginger.
In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, and water. Set aside.
Heat a large skillet or wok over medium-high heat. Add the vegetable oil.
