Ingredients

  • 300 g ground pork
  • 1 tbsp ginger
  • 1 tbsp garlic
  • 2 stalks green onion
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp Shaoxing wine
  • 0.5 tsp white pepper
  • 30 pieces dumpling wrappers
  • 2 tbsp chili oil
  • 1 tsp Sichuan peppercorns
  • 1 tsp sugar
  • 1.5 tbsp black vinegar
  • 1 tbsp ground Sichuan chili flakes
  • 2 tbsp hot water

Directions

Step 1

In a large mixing bowl, combine the ground pork, minced ginger, garlic, and finely chopped green onions.

Step 2

Add soy sauce, sesame oil, Shaoxing wine, and white pepper to the pork mixture. Mix well until the filling is thoroughly combined and cohesive.

Step 3

Set up a dumpling workspace with dumpling wrappers, a small bowl of water, and the pork filling.

Step 4

Place about 1 teaspoon of filling in the center of a wrapper. Dip your finger in water and run it along the edges of the wrapper to create a seal. Fold the wrapper into a half-moon shape and press the edges tightly to seal. Repeat for all wrappers.
