  • 1 lb ground beef (80/20 blend)
  • 1 large onion
  • 2 garlic cloves

  • 4 brioche burger buns
  • 4 slices sliced cheddar cheese
  • 0.25 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tsp pickle juice
  • 2 tbsp vegetable oil

Directions

Step 1

Thinly slice the onion. Finely mince the garlic.

Step 2

In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the sliced onion and a pinch of salt. Stir occasionally and cook for 12-15 minutes until caramelized and golden brown. Remove from the skillet and set aside.

Step 3

In a large mixing bowl, combine the ground beef, minced garlic, Worcestershire sauce, Dijon mustard, paprika, salt, and black pepper. Mix gently with your hands until just combined; avoid overmixing.

Divide the beef mixture into 4 equal portions and shape into burger patties, about 1/2 inch thick. Press a small indentation into the center of each patty with your thumb to ensure even cooking.
