  • 2 medium carrots, peeled and diced
  • 2 pieces celery stalks, diced
  • 14 ounces canned diced tomatoes (with juice)
  • 6 cups low-sodium chicken broth
  • 0.5 cup uncooked white rice
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 0.5 teaspoon smoked paprika
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large stockpot or Dutch oven over medium heat.

Step 2

Season the chicken breasts with salt and black pepper on both sides. Add them to the pot and sear for 4-5 minutes per side, until browned. Remove the chicken from the pot and set aside.
