Ingredients

  • 200 grams Dried soba noodles
  • 1 liter Water
  • 200 ml Mentsuyu (Japanese noodle dipping sauce, store-bought or homemade)
  • 500 ml Cold water or ice cubes
  • 2 tablespoons Sliced green onions
  • 2 tablespoons Grated daikon (optional)
  • 1 teaspoon Wasabi paste (optional)
  • 2 tablespoons Nori (seaweed), finely shredded

Directions

Step 1

Bring 1 liter of water to a boil in a large pot.

Step 2

Add the 200 grams of dried soba noodles and cook according to the package instructions (usually 4-5 minutes). Stir occasionally to prevent the noodles from sticking together.

Step 3

While the noodles cook, prepare a large bowl of cold water and add ice cubes to make it extra cold.

Step 4

Once the noodles are cooked, immediately drain them in a colander and rinse thoroughly under cold running water to stop the cooking process and remove excess starch. Use your hands to gently rub the noodles while rinsing.

Step 5

Transfer the rinsed noodles to the bowl of ice-cold water to chill completely. Let them sit for a few minutes.

Step 6

Arrange the chilled soba noodles on a bamboo mat or serving plate, draining any excess water.

Step 7

Portion out 200 ml of mentsuyu dipping sauce into small individual bowls for each person. If the mentsuyu is concentrated, dilute it with water according to the instructions on the bottle (typically a 1:2 ratio of mentsuyu to water).

Step 8

Garnish the noodles with 2 tablespoons of shredded nori on top and prepare additional toppings like sliced green onions, grated daikon, and wasabi paste as desired.

Step 9

Serve the chilled soba noodles alongside the dipping sauce and optional toppings. To eat, pick up small portions of the noodles with chopsticks, dip them into the sauce, and enjoy.
