Ingredients

  • 4 pieces salmon fillets
  • 1.5 cups basmati or jasmine rice
  • 3 cups water
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 pieces garlic cloves, minced
  • 2 tablespoons lemon juice
  • 0.5 cup heavy cream
  • 1 teaspoon fresh thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Rinse the rice under cold water until the water runs clear, then set aside.

Step 2

In a medium saucepan, bring 3 cups of water to a boil. Add the rice, reduce the heat to low, cover, and cook for 15 minutes or until the rice is tender and all the water is absorbed. Remove from heat and set aside, keeping it covered to stay warm.

While the rice cooks, pat the salmon fillets dry using paper towels. Season both sides with salt and black pepper.
