  • 2 cups Rolled oats
  • 1 cup Almonds
  • 0.5 cup Dried cranberries
  • 0.5 cup Honey
  • 0.75 cup Peanut butter (natural, unsweetened)
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.25 cup Dark chocolate chips

Directions

Step 1

Begin by toasting the rolled oats and almonds. Place them in a dry skillet over medium heat, stirring frequently, for about 5–6 minutes until they are lightly golden and fragrant. Remove from the heat and set aside to cool.

Step 2

In a large mixing bowl, combine the toasted oats, almonds, and dried cranberries.

Step 3

In a small saucepan, warm the honey and peanut butter over low heat, stirring constantly, until the mixture is smooth and well combined. Remove from heat and stir in the vanilla extract, ground cinnamon, and salt.

Pour the warm honey and peanut butter mixture over the oat mixture. Mix thoroughly using a wooden spoon or spatula until all the dry ingredients are coated evenly.

Let the mixture cool for 2–3 minutes, then fold in the dark chocolate chips. (The mixture should still be pliable but not so warm that it melts the chocolate chips.)
