Ingredients

  • 4 pieces boneless, skinless chicken thighs
  • 2 tablespoons za'atar spice blend
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 cup Israeli couscous
  • 1.5 cups chicken broth
  • 1 teaspoon orange zest
  • 0.25 cup orange juice
  • 2 cloves garlic
  • 0.5 cup red onion
  • 0.25 cup parsley
  • 0.25 cup pomegranate seeds (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the chicken thighs dry with paper towels. Rub both sides with 2 tablespoons of olive oil, the za'atar spice blend, salt, and black pepper.

Step 3

Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat. Sear the chicken thighs for 4 minutes on each side until golden brown.

Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the internal temperature of the chicken reaches 165°F (75°C).

While the chicken is baking, prepare the couscous. Dice the red onion and mince the garlic.
