Ingredients

  • 500 grams all-purpose flour
  • 300 milliliters water
  • 7 grams active dry yeast
  • 10 grams salt
  • 30 milliliters olive oil
  • 50 grams za'atar
  • 10 grams sugar

Directions

Step 1

In a large mixing bowl, combine 300 milliliters of warm water, 10 grams of sugar, and 7 grams of active dry yeast. Stir gently and let it sit for 5 to 10 minutes until frothy to activate the yeast.

Step 2

Add 500 grams of all-purpose flour and 10 grams of salt to the yeast mixture. Mix with a wooden spoon until a rough dough begins to form.

Step 3

Pour in 30 milliliters of olive oil and continue to mix until the dough comes together and becomes smooth. You may knead by hand in the bowl for about 5 minutes.

Step 4

Transfer the dough to a lightly floured surface and knead it for another 5 minutes until it's smooth and elastic.

Step 5

Place the dough back into the bowl, cover with a clean kitchen towel, and let it rise in a warm, draft-free location for about 1 hour or until it has doubled in size.

Step 6

Once the dough has risen, punch it down gently and divide it into 8 equal pieces.

Step 7

Roll each piece into a ball, cover with the towel, and let rest for another 10 minutes.

Step 8

Preheat a large heavy skillet or griddle over medium-high heat.

Step 9

On a lightly floured surface, roll out one dough ball to approximately 1/4-inch thickness for each laffa.

Step 10

Sprinkle a generous amount of za'atar over the rolled-out laffa, pressing lightly so it adheres to the dough.

Step 11

Carefully lay the laffa in the hot skillet or on the griddle, za'atar side facing up, and cook for about 1-2 minutes until you see bubbles forming on the surface and the bottom is lightly browned.

Step 12

Flip the laffa and cook for another 1-2 minutes until lightly charred and cooked through.

Step 13

Transfer the cooked laffa to a clean towel and cover to keep warm. Repeat the process with the remaining dough balls.

Step 14

Serve warm za'atar laffa with your choice of dips, or use it as a wrap for various fillings.
