Ingredients

  • 360 grams all-purpose flour
  • 240 ml warm water
  • 7 grams active dry yeast
  • 5 grams sugar
  • 5 grams salt
  • 60 ml extra virgin olive oil
  • 40 grams za'atar spice blend
  • 10 ml lemon juice

Directions

Step 1

In a large mixing bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Step 2

Add 30 ml of olive oil and salt to the yeast mixture, then gradually add the flour while stirring with a wooden spoon or a dough hook attached to a stand mixer.

Step 3

Knead the dough on a lightly floured surface for about 8-10 minutes until it is smooth and elastic. If using a stand mixer, knead with the dough hook for about 5-6 minutes.

Step 4

Form the dough into a ball and place it in a lightly greased bowl, covering it with a clean kitchen towel. Let it rise in a warm place for about 1 hour or until it doubles in size.

Step 5

Preheat your oven to 220°C (430°F). Line a baking sheet with parchment paper.

Step 6

Punch down the risen dough to release air, then divide it into four equal portions. Roll each portion into a round, flat circle about 1/4-inch thick.

Step 7

Place the discs onto the prepared baking sheet. In a small bowl, mix the remaining olive oil with za'atar spice and lemon juice to form a paste.

Step 8

Spread the za'atar paste evenly over the top of each dough disc.

Step 9

Bake in the preheated oven for about 18-20 minutes or until the edges are golden and crispy.

Step 10

Once baked, remove from the oven and drizzle with a little more olive oil if desired. Serve warm or at room temperature.
