Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 medium jalapeño, seeded and diced (optional)
  • 1 pound ground turkey (optional for turkey chili)
  • 28 ounces canned diced tomatoes
  • 15 ounces canned black beans, drained and rinsed
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned corn, drained
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1.5 cups vegetable broth (or chicken broth)
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 1 cup shredded cheese (optional, for topping)
  • 0.5 cup sour cream (optional, for topping)
  • 1 cup tortilla chips (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion, green bell pepper, red bell pepper, garlic, and jalapeño (if using). Sauté for about 5-7 minutes, until the vegetables are softened.

Step 3

If making turkey chili, add the ground turkey to the pot and cook for 6-8 minutes, breaking it up with a wooden spoon, until it is browned and fully cooked.

Step 4

Stir in the chili powder, ground cumin, paprika, oregano, salt, and black pepper. Cook for 1-2 minutes to toast the spices and enhance their flavor.

Step 5

Add the tomato paste and stir well to coat the vegetables and/or turkey evenly.

Step 6

Pour in the diced tomatoes (with their juices), black beans, kidney beans, corn, and vegetable or chicken broth. Stir everything together.

Step 7

Bring the mixture to a gentle boil over medium-high heat, then reduce the heat to low. Cover and simmer for 25-30 minutes, stirring occasionally to prevent sticking.

Step 8

Taste the chili and adjust the seasonings if necessary, adding more salt, pepper, or spices as desired.

Step 9

Serve hot in bowls, garnished with fresh cilantro, shredded cheese, sour cream, and/or tortilla chips, if desired.
