Ingredients

  • 250 grams All-purpose flour
  • 1 teaspoon Salt
  • 125 grams Cold unsalted butter
  • 4 tablespoons Cold water
  • 1 tablespoon Olive oil
  • 1 medium Red onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 medium Carrot, diced
  • 1 small Zucchini, diced
  • 1 small Potato, diced into small cubes
  • 50 grams Frozen peas
  • 100 grams Grated cheddar cheese
  • 1 large Egg, beaten (for egg wash)
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried oregano

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt. Add cold, diced butter and rub it into the flour using your fingertips until the mixture resembles breadcrumbs.

Step 2

Gradually add cold water, one tablespoon at a time, mixing with a fork until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 20 minutes.

Step 3

Heat olive oil in a skillet over medium heat. Add the chopped red onion and garlic, cooking until softened and fragrant, about 2-3 minutes.

Add the diced carrot, zucchini, and potato. Cook for 5-7 minutes, stirring occasionally, until the veggies begin to soften.

Stir in the frozen peas, black pepper, and dried oregano. Cook for an additional 2 minutes, then remove from heat and allow the mixture to cool slightly.

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Roll out the chilled dough on a floured surface to approximately 3mm thickness. Cut out 6-inch circles using a pastry cutter or small plate as a guide.

Place a spoonful of the veggie mixture in the center of each dough circle. Sprinkle grated cheddar cheese on top of the filling.

Step 9

Fold the dough over to create a half-moon shape. Press the edges together to seal, then crimp with a fork for extra security.

Transfer the pasties onto the prepared baking sheet and brush the tops with the beaten egg for a golden finish.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the pasties are golden brown and crispy.
