Ingredients

  • 3 medium Ripe bananas
  • 2 tablespoons Ground flaxseed
  • 5 tablespoons Water
  • 0.25 cup Maple syrup
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 1.5 cups Whole wheat flour
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 0.5 cup Chopped walnuts or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it with coconut oil.

Step 2

In a small bowl, combine the ground flaxseed and water to create a flax egg. Let it sit for about 5 minutes to thicken.

Step 3

In a large mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.

Step 4

Add the prepared flax egg, maple syrup, melted coconut oil, and vanilla extract to the mashed bananas. Mix well until fully combined.

Step 5

In a separate bowl, whisk together the whole wheat flour, baking soda, salt, and cinnamon.

Step 6

Gradually fold the dry ingredients into the wet ingredients, mixing until just incorporated. Be careful not to overmix the batter.

Step 7

If desired, gently fold in chopped walnuts or chocolate chips for added texture and flavor.

Step 8

Evenly divide the batter among the 12 muffin cups, filling each about 3/4 full.

Step 9

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 10

Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely before enjoying.
