Ingredients

  • 3 cups Cooked shredded chicken
  • 2 cups Cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 10 Corn tortillas
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 2 cups Chicken broth
  • 2 tablespoons Tomato paste
  • 2 teaspoons Chili powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Slowly whisk in the chicken broth until smooth. Add the tomato paste, chili powder, garlic powder, cumin, salt, and black pepper. Simmer for 5-7 minutes until the sauce has thickened slightly. Set aside.
