Ingredients

  • 2 pounds Russet potatoes
  • 1 Garlic bulb
  • 4 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 0.5 cup Milk
  • 1 teaspoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice off the top of the garlic bulb to expose the tops of the cloves. Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for 35-40 minutes, or until the garlic is soft and golden brown. Set aside to cool.

Step 3

Peel and cut the potatoes into 2-inch chunks. Place in a large pot and cover with cold water. Add a pinch of salt to the water.

Bring the pot to a boil over medium-high heat, then reduce heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.
