Ingredients

  • 1 cup Arborio rice
  • 2 cups Water
  • 3 cups Whole milk
  • 1 cup Pumpkin puree
  • 0.5 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt
  • 0 Whipped cream (optional, for garnish)
  • 0 Chopped pecans (optional, for garnish)

Directions

Step 1

In a medium saucepan over medium heat, bring the water to a boil.

Step 2

Add the Arborio rice to the boiling water and reduce the heat to low. Cover and simmer for about 15 minutes or until the water is mostly absorbed.

Step 3

Stir in the milk, pumpkin puree, granulated sugar, brown sugar, cinnamon, nutmeg, and salt. Increase the heat to medium and cook, stirring frequently, for about 20 minutes until the mixture thickens and the rice becomes tender.

Step 4

Reduce the heat to low and stir in the vanilla extract and butter until fully incorporated.

Step 5

Remove the saucepan from the heat and let the pudding cool slightly. The pudding will continue to thicken as it cools.

Step 6

Serve warm, or transfer to individual serving dishes and chill in the refrigerator for a cold version.

Step 7

Optional: Top with whipped cream and chopped pecans for added texture and flavor before serving.
