Ingredients

  • 4 pieces salmon fillets
  • 2 whole lemon
  • 3 whole garlic cloves
  • 1 bunch fresh dill
  • 4 cups water
  • 1 cup white wine
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Prepare the poaching liquid by slicing 1 of the lemons into thin rounds and smashing the 3 garlic cloves with the flat side of a knife.

Step 2

In a large, deep skillet or pot, combine the water, white wine, lemon slices, smashed garlic, and half of the fresh dill. Bring the mixture to a gentle simmer over medium heat.

Step 3

While the poaching liquid is heating, season the salmon fillets evenly with salt and pepper on both sides.

Step 4

Once the poaching liquid is simmering, carefully add the salmon fillets to the skillet, ensuring they are fully submerged. Lower the heat to medium-low to maintain a gentle simmer (do not let it boil).

Step 5

Cover the skillet with a lid and poach the salmon for 10-12 minutes, or until the fillets are opaque and flake easily with a fork.

Step 6

While the salmon is poaching, zest and juice the second lemon, setting both aside for later use.

Step 7

When the salmon is finished cooking, carefully remove the fillets from the skillet using a slotted spatula and transfer them to a serving platter.

Step 8

Drizzle the salmon fillets with olive oil, the freshly squeezed lemon juice, and sprinkle with the lemon zest for extra brightness. Garnish with the remaining fresh dill sprigs.

Step 9

Serve the poached lemony salmon warm, and enjoy with a side of vegetables or a light salad for a complete meal.
