  • 1 cup Corn kernels, frozen or canned (drained)
  • 1 medium Red bell pepper, diced
  • 2 cups Cheddar cheese, shredded
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 10 pieces Flour tortillas (large)

Directions

Step 1

In a large mixing bowl, combine the cooked rice, black beans, pinto beans, diced tomatoes, corn, red bell pepper, cheddar cheese, ground cumin, chili powder, garlic powder, and salt. Stir until all ingredients are evenly distributed.

Lay a flour tortilla flat on a clean surface. Scoop approximately 1/2 cup of the filling mixture into the center of the tortilla.
