Ingredients

  • 400 g Extra-firm tofu
  • 100 g All-purpose flour
  • 50 g Cornstarch
  • 1 tsp Salt
  • 0.5 tsp Ground turmeric
  • 1 tsp Garam masala
  • 0.25 tsp Crushed dried cloves (laung)
  • 500 ml Oil for frying
  • 400 g Tomatoes (blended into a puree)
  • 200 ml Heavy cream
  • 3 cloves Garlic (minced)
  • 1 tsp Ginger (minced)
  • 0.5 tsp Cumin seeds
  • 1 tsp Kashmiri red chili powder
  • 1 tsp Sugar
  • 2 tbsp Cilantro (chopped, for garnish)
  • 200 ml Water
  • 1 tsp Salt (for sauce)

Directions

Step 1

Press the tofu to remove excess moisture and cut it into thin rectangular strips for rolling.

Step 2

In a bowl, mix the all-purpose flour, cornstarch, 1 tsp salt, turmeric, garam masala, and crushed cloves. Add water gradually to form a thick, smooth batter.

Step 3

Coat each tofu strip evenly in the batter and roll them to form roll shapes (similar to spring rolls). Secure if needed with toothpicks.

Step 4

Heat oil in a deep frying pan on medium heat. Fry the tofu rolls until golden and crispy, then drain on paper towels.

In a separate large saucepan, heat 1 tbsp of oil over medium heat. Add cumin seeds and let them splutter.

Add the minced garlic and ginger, sautéing for a minute until fragrant.

Stir in the pureed tomatoes. Add Kashmiri red chili powder, sugar, and 1 tsp salt, stirring well. Let the sauce simmer for 10-15 minutes until thickened.

Reduce the heat to low and gently stir in the heavy cream. Adjust seasoning if needed and let it simmer for another 5 minutes.

Add 200 ml water to adjust the sauce consistency to your liking. Stir well and keep warm.

To serve, place the crispy tofu rolls in a serving dish and generously pour the tomato cream sauce over the rolls.

Garnish with chopped cilantro and serve hot with naan, rice, or crusty bread.
