Ingredients

  • 2 pounds ground beef (80/20 mix preferred)
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 2 units large egg
  • 2 tablespoons Worcestershire sauce
  • 0.5 cup onion, finely diced
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 cup ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon brown sugar
  • 1.5 pounds baby potatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 0.5 teaspoon salt (for potatoes)
  • 0.25 teaspoon black pepper (for potatoes)

Directions

Step 1

In a large mixing bowl, combine ground beef, breadcrumbs, milk, eggs, Worcestershire sauce, diced onion, garlic powder, Italian seasoning, salt, and black pepper.

Step 2

Mix the meat mixture thoroughly with your hands or a wooden spoon until well combined.

Step 3

Shape the mixture into a loaf and place it on a large sheet of aluminum foil, folding up the edges to create a makeshift tray for the meatloaf.

Step 4

In a small bowl, whisk together ketchup, yellow mustard, and brown sugar. Spread half of this glaze mixture evenly over the top of the meatloaf. Reserve the other half for later.

Step 5

In another mixing bowl, toss the halved baby potatoes with olive oil, paprika, dried parsley, salt, and black pepper until well coated.

Step 6

Line the bottom of your crock pot with the seasoned potatoes, spreading them out evenly.

Step 7

Carefully lift the aluminum foil tray with the meatloaf and place it on top of the potatoes in the crock pot. Ensure the edges of the foil are slightly raised to contain juices as the meatloaf cooks.

Step 8

Cover the crock pot with its lid and cook on LOW for 6 hours or until the internal temperature of the meatloaf reaches 160°F (71°C).

Step 9

About 30 minutes before cooking is complete, spread the remaining glaze over the meatloaf and allow it to finish cooking.

Step 10

Once done, carefully remove the meatloaf using the foil tray. Let it rest for 10 minutes before slicing.

Step 11

Serve the meatloaf slices alongside the tender potatoes, and enjoy a delicious, hearty meal!
