  • 1 can (14 ounces) Diced tomatoes (with juices)
  • 1 can (13.5 ounces) Coconut milk
  • 1 tablespoon Lime juice, freshly squeezed
  • 2 tablespoons Fresh cilantro, chopped
  • 4 cups Cooked basmati rice (for serving, optional)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.
