Ingredients

  • 1 lb Ground turkey or lean ground beef
  • 0.5 cup Oats (rolled or quick-cooking)
  • 1 large Egg
  • 0.5 cup Onion, finely chopped
  • 0.5 cup Carrot, grated
  • 2 cloves Garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 0.25 cup Ketchup
  • 1 teaspoon Dried Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.25 cup Ketchup (for topping)
  • 1 tablespoon Fresh parsley, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin or cupcake pan with cooking spray or line it with cupcake liners.

Step 2

In a large mixing bowl, combine the ground turkey (or lean ground beef), oats, egg, chopped onion, grated carrot, minced garlic, Worcestershire sauce, ketchup, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated but avoid overmixing to keep the meatloaf tender.

Step 3

Divide the meat mixture evenly among the 12 muffin cups, pressing it down gently to fill each cup. They should be almost full but not overflowing.

Step 4

Spread a small dollop of ketchup (about 1 teaspoon) over the top of each portion for a flavorful glaze.

Step 5

Place the pan in the preheated oven and bake for 20-25 minutes, or until the internal temperature of the meatloaf cupcakes reaches 165°F (74°C).

Step 6

Remove the pan from the oven and let the meatloaf cupcakes rest for 5 minutes before carefully removing them from the pan.

Step 7

Garnish with fresh parsley before serving, if desired. These meatloaf cupcakes are perfect with a side of mashed potatoes and steamed vegetables!
