Ingredients

  • 240 ml Whole milk
  • 85 g Unsalted butter
  • 100 g Granulated sugar
  • 2.25 tsp Active dry yeast
  • 60 ml Warm water
  • 500 g All-purpose flour
  • 2 tsp Ground cardamom
  • 1 tsp Salt
  • 1 Large egg
  • 120 g Raisins
  • 60 g Candied citron or mixed peel
  • 100 g Powdered sugar (optional, for glaze)
  • 2 tbsp Milk (optional, for glaze)

Directions

Step 1

Warm the milk in a small saucepan until it reaches about 43°C (110°F). Remove from heat, add the butter, and let it melt. Stir the sugar into the milk mixture and set aside to cool slightly.

Step 2

In a small bowl, dissolve the active dry yeast in warm water (43°C/110°F). Let it sit for about 5-10 minutes, or until it becomes frothy.

In a large mixing bowl, combine the flour, ground cardamom, and salt. Mix well.

Once the milk mixture is lukewarm and the yeast mixture is frothy, pour both into the bowl of dry ingredients. Add the egg and mix until a dough starts to form.

Knead the dough on a lightly floured surface for about 8-10 minutes, until it is smooth and elastic. Alternatively, this can be done using a stand mixer with a dough hook on medium speed for 5-7 minutes.
