Ingredients

  • 2 pounds yucca (cassava)
  • 8 cups water

  • 6 whole garlic cloves

  • 0.5 teaspoons ground cumin
  • 1 tablespoon white vinegar
  • 1 medium onion
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Peel the yucca and cut it into 3–4 inch sections. Split each chunk lengthwise and remove the woody core in the center.

Rinse the yucca pieces thoroughly under cold water.

In a large pot, add the yucca, water, and 1 teaspoon of salt. Bring to a boil over medium-high heat, then reduce the heat to a simmer. Cook for 25–30 minutes or until the yucca is fork-tender.

While the yucca is cooking, prepare the mojo sauce. Crush the garlic cloves using a mortar and pestle or finely mince them. Set aside.
