Ingredients

  • 1 whole Garlic bulb
  • 1 large Yellow onion
  • 3 tablespoons Olive oil
  • 8 ounces Cream cheese
  • 1 cup Sour cream
  • 0.5 cup Mayonnaise
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Chives

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut the top off the garlic bulb to expose the tops of the cloves. Drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for 30–40 minutes or until the cloves are soft and golden brown. Let it cool before squeezing the roasted garlic out of the cloves.

Step 3

While the garlic is roasting, peel and thinly slice the onion. Heat 2 tablespoons of olive oil in a skillet over medium-low heat. Add the sliced onion and cook, stirring occasionally, for 20–25 minutes or until the onions are golden brown and caramelized. Remove from heat and allow to cool.

Step 4

In a mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, lemon juice, salt, and pepper. Mix until smooth and creamy.

Step 5

Stir in the roasted garlic, caramelized onions, chopped parsley, and chives. Mix thoroughly to distribute the flavors evenly.
