Ingredients

  • 1 lb Boneless, skinless chicken thighs
  • 0.5 cup Soy sauce
  • 0.25 cup Mirin
  • 2 tablespoons Brown sugar
  • 1 tablespoon Honey
  • 1 tablespoon Rice vinegar
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 cups Broccoli florets
  • 1 cup Carrots, julienned
  • 1 medium Onion, sliced
  • 2 tablespoons Vegetable oil
  • 4 cups Cooked white rice
  • 2 tablespoons Green onions, sliced (for garnish)
  • 1 tablespoon Sesame seeds (for garnish)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

In a small bowl, mix the soy sauce, mirin, brown sugar, honey, rice vinegar, minced garlic, and minced ginger to create the teriyaki sauce.

In a separate smaller bowl, mix the cornstarch and water to form a slurry. Set aside for later use.
