Ingredients

  • 240 ml Strong black tea
  • 100 g Golden raisins
  • 100 g Dark raisins
  • 75 g Glacé cherries
  • 150 g Light brown sugar
  • 200 g All-purpose flour
  • 2 tsp Mixed spice
  • 2 tsp Baking powder
  • 1 large Egg
  • 1 tbsp Unsalted butter (for greasing)

Directions

Step 1

Brew 240ml of strong black tea and allow it to cool slightly.

Step 2

In a large mixing bowl, combine the golden raisins, dark raisins, and chopped glacé cherries with the brewed tea. Let the mixture soak for at least 1 hour to plump up the fruits.

Step 3

Preheat your oven to 160°C (320°F) or 140°C (284°F) for fan ovens. Grease a 2lb loaf tin with unsalted butter and line it with baking parchment.

Step 4

In a separate mixing bowl, sift together the all-purpose flour, mixed spice, and baking powder. Stir in the light brown sugar.

Once the tea and fruit mixture has soaked, add it to the dry ingredients. Mix well until evenly combined.
