1. Wash and peel the cucumber. Grate it using a box grater or shredder. Optionally, squeeze out some of the water from the grated cucumber if you prefer a thicker raita.
2. Finely chop the mint leaves and cilantro (if using). If you are including green chili, finely chop it as well.
3. In a mixing bowl, whisk the plain yogurt until smooth and creamy.
4. Add the grated cucumber, chopped mint, and cilantro to the yogurt. Mix well.
