Ingredients

  • 1 cup plain Greek yogurt
  • 3 tablespoons golden raisins
  • 2 tablespoons fresh mint leaves
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 small garlic clove
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons water (optional, for thinning)

Directions

Step 1

In a small bowl, add the golden raisins and cover them with hot water. Let them soak for 5 minutes to soften.

Step 2

While the raisins are soaking, finely chop the fresh mint leaves and mince the garlic clove.

Step 3

Drain the soaked raisins and pat them dry with a kitchen towel or paper towel.

Step 4

In a medium mixing bowl, combine the Greek yogurt, lemon juice, honey, and olive oil.

Step 5

Add the softened raisins, chopped mint, minced garlic, salt, and black pepper to the yogurt mixture. Stir well to combine.

Step 6

For a smoother consistency, use an immersion blender or food processor to blend the mixture until creamy. You can also leave it slightly chunky if preferred.

Step 7

If the dressing is too thick for your liking, gradually add water (1 tablespoon at a time) and mix until the desired consistency is reached.

Step 8

Taste the dressing and adjust seasoning with more salt, pepper, or lemon juice as desired.

Step 9

Transfer the dressing to a jar or container and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
