Ingredients

  • 8 cups Whole milk
  • 0.5 cups Plain yogurt with live cultures (starter)
  • 1 teaspoons Vanilla extract (optional)
  • 2 tablespoons Sugar or honey (optional)

Directions

Step 1

Pour the whole milk into the crock pot. Cover with the lid.

Set the crock pot to the 'low' setting and let it heat the milk for 2.5 hours.

Step 3

After 2.5 hours, turn off the crock pot but leave the lid on. Let the milk cool for an additional 3 hours. You want the milk temperature to drop to about 110°F (43°C).

In a small bowl, mix the plain yogurt starter with 1 cup of the warm milk from the crock pot. Whisk until smooth.

Gently pour the yogurt-milk mixture back into the crock pot and stir well to combine. At this point, you can add vanilla extract or sugar/honey for flavor, if desired.

Cover the crock pot with its lid and wrap the entire crock pot with a thick towel to insulate it. Let it sit, undisturbed, for 8-12 hours or overnight. This is when the yogurt will culture and thicken.

After the incubation period, check the consistency of the yogurt. It will have thickened slightly and will continue to thicken once chilled.

Transfer the yogurt into airtight containers and refrigerate for at least 4 hours before serving.
