  • 1 cup Plain yogurt
  • 0.5 cup Brown sugar

  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 0.5 cup Raisins or dried fruit (optional)
  • 0.25 cup Nuts or seeds (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly with oil.

Step 2

In a large mixing bowl, combine the wheat bran and yogurt. Let it sit for 5 minutes to soften the bran.

Step 3

Add the brown sugar, vegetable oil, egg, and vanilla extract to the bran mixture, whisking until well combined.

In a separate medium bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.
