Ingredients

  • 400 g spaghetti
  • 250 g Greek yoghurt
  • 2 pieces garlic cloves
  • 2 tbsp olive oil
  • 50 g Parmesan cheese
  • 1 tsp lemon zest
  • 2 tbsp fresh parsley
  • 2 tbsp fresh mint leaves
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

While the pasta is cooking, peel and finely mince the garlic.

Step 3

In a small saucepan, heat the olive oil over medium-low heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned. Remove from heat.

In a large mixing bowl, whisk together the Greek yoghurt, grated Parmesan cheese, lemon zest, sautéed garlic (with the oil), and a generous pinch of salt and black pepper.
