Ingredients

  • 300 grams plain Greek yoghurt
  • 200 ml heavy cream
  • 50 grams powdered sugar
  • 2 teaspoons gelatin
  • 2 tablespoons cold water
  • 300 grams fresh strawberries
  • 50 grams granulated sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

Directions

Step 1

In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water and let it bloom for 5 minutes.

Meanwhile, in a mixing bowl, whisk the Greek yoghurt, 30 grams of powdered sugar, and vanilla extract until smooth.

Step 3

Heat the bloomed gelatin in the microwave for 15 seconds or until fully dissolved. Let cool for 1-2 minutes before adding it to the yoghurt mixture. Stir well to combine.

In another bowl, whip the heavy cream with the remaining 20 grams of powdered sugar until stiff peaks form.

Gently fold the whipped cream into the yoghurt mixture in two batches to create a light and airy mousse. Be careful not to deflate the mixture.
