Ingredients

  • 1 cup Wheat bran
  • 1 cup Plain yoghurt
  • 1 cup All-purpose flour
  • 0.5 cup Brown sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg
  • 0.25 cup Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins or dried fruit (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease the tin with cooking spray.

Step 2

In a large bowl, combine the wheat bran and yoghurt. Let the mixture sit for 10 minutes to allow the bran to soften.

Step 3

In a separate bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon.
