Ingredients

  • 2 pieces ripe mangoes
  • 200 grams plain yoghurt
  • 150 ml heavy cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon gelatin powder
  • 2 tablespoons cold water
  • 1 teaspoon vanilla extract
  • 4 leaves fresh mint leaves (optional, for garnish)

Directions

Step 1

Peel and chop the ripe mangoes into small chunks. Reserve a few small pieces for garnishing, if desired.

Step 2

Blend the mango chunks in a blender until smooth to create a mango puree. Set aside.

Step 3

In a small bowl, sprinkle 1 teaspoon of gelatin powder over 2 tablespoons of cold water. Let it bloom for 5 minutes.

Step 4

Meanwhile, in a mixing bowl, whisk the plain yoghurt and powdered sugar together until smooth.

Step 5

Heat the bloomed gelatin in the microwave for 10–15 seconds or until fully dissolved, but do not let it boil.

Step 6

Add the dissolved gelatin to the mango puree and mix well to combine.

Step 7

Gently fold the mango puree into the yoghurt mixture until evenly combined.

Step 8

In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.

Step 9

Fold the whipped cream into the mango-yoghurt mixture until smooth and airy, ensuring not to overmix.

Step 10

Divide the mousse mixture evenly into 4 serving glasses or ramekins.

Step 11

Chill in the refrigerator for at least 2 hours until set.

Step 12

Optional: Garnish with reserved mango chunks and fresh mint leaves before serving.
