Ingredients

  • 2 lbs beef marrow bones
  • 12 cups water
  • 1 large onion, diced
  • 2 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 1 tsp turmeric powder
  • 2 tbsp hawaij spice blend
  • 3 garlic cloves, minced
  • 0.5 cup fresh cilantro, chopped
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp ground cumin

Directions

Step 1

Rinse the beef marrow bones thoroughly under cold water to remove any impurities.

Step 2

In a large stockpot, add the bones and cover them with 12 cups of water. Bring to a boil over high heat.

Step 3

Once boiling, reduce the heat to medium and skim off any foam or impurities that rise to the surface.

Step 4

Add the diced onion, sliced carrots, and cubed potatoes to the pot.

Step 5

Stir in the turmeric powder, hawaij spice blend, minced garlic, salt, pepper, and ground cumin.

Reduce the heat to low, cover the pot, and let the soup simmer for 2.5 to 3 hours. Stir occasionally and skim off any fat as needed.
