Ingredients

  • 4 cups (sliced) yellow squash
  • 1 cup (diced) onion
  • 4 tablespoons butter
  • 2 cloves (minced) garlic
  • 2 large eggs
  • 0.5 cup sour cream
  • 1 cup shredded cheddar cheese
  • 0.25 cup (grated) parmesan cheese
  • 0.5 cup breadcrumbs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons (chopped, optional for garnish) fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x9-inch or similar-size baking dish.

Step 2

Slice the yellow squash into thin rounds and dice the onion. Mince the garlic cloves.

Step 3

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced squash and onion, cooking for about 5-7 minutes until softened. Add the minced garlic in the final minute, stirring until fragrant.

In a large mixing bowl, whisk together the eggs, sour cream, salt, and black pepper. Stir in the cheddar cheese and parmesan cheese.
