In a large mixing bowl, combine yellow maize flour, whole wheat flour, and salt. Mix well.
Add the chopped fenugreek leaves, green chilies, carom seeds, and turmeric powder. Stir to evenly distribute the ingredients.
Gradually add warm water, a little at a time, and knead the mixture into a soft dough. The dough might feel slightly sticky; use a little extra whole wheat flour for dusting, if needed, to make it manageable.
Divide the dough into 8 equal portions and roll them into balls.
Heat a flat skillet or tawa over medium heat.
Take one dough ball and gently flatten it between your palms. Use a rolling pin (dusting with flour, if necessary) to roll it into a small, thick disc. Due to the yellow maize flour's crumbly nature, handle gently.
Place the rolled bread on the hot skillet. Cook for 1–2 minutes on one side or until lightly golden, then flip.
Add a small amount of ghee or oil around the edges of the bread, and cook the other side for another 1–2 minutes. Flip once more and press gently with a spatula to ensure even cooking.
Remove the bread from the skillet and keep it warm using a clean kitchen towel. Repeat the process with the remaining dough balls.
Serve hot with yogurt, pickle, or a spicy curry of your choice!
