Ingredients

  • 2 cups Basmati rice
  • 1.5 cups Coconut milk
  • 1.5 cups Water
  • 1 teaspoon Turmeric powder
  • 2 tablespoons Vegetable oil or ghee
  • 1 medium, finely chopped Onion
  • 2 minced Garlic cloves
  • 1 teaspoon Cumin seeds
  • 3 Cardamom pods
  • 1 teaspoon Salt
  • 2 tablespoons, finely chopped Cilantro

Directions

Step 1

Rinse the basmati rice under cold water several times until the water runs clear. Set it aside to drain.

Step 2

In a large saucepan, heat the vegetable oil or ghee over medium heat.

Step 3

Add the cumin seeds and cardamom pods, and sauté for 1-2 minutes until fragrant.

Step 4

Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and sauté for another minute.

Step 5

Sprinkle the turmeric powder into the pan and stir well to combine with the onion and garlic mixture.

Step 6

Add the rinsed rice, and stir gently to coat each grain with the spiced mixture.

Step 7

Pour in the coconut milk, water, and salt. Mix well and bring to a boil.

Step 8

Once the mixture is boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let the rice simmer for 18-20 minutes without lifting the lid.

Step 9

Turn off the heat and let the rice rest, covered, for an additional 5 minutes.

Step 10

Fluff the rice with a fork and garnish with chopped cilantro before serving.

Step 11

Serve warm as a side dish to complement curries, stews, or grilled meats.
