Ingredients

  • 3 medium Potatoes
  • 3 medium Carrots
  • 250 grams Green beans
  • 1 medium Onion
  • 3 large Garlic cloves
  • 1 tablespoon Fresh ginger
  • 3 tablespoons Olive oil
  • 1 teaspoon Turmeric
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 250 ml Water

Directions

Step 1

Peel and cube the potatoes into 1-inch pieces. Peel the carrots and cut them into thick diagonal slices. Trim the green beans into 2-inch pieces.

Step 2

Finely chop the onion. Mince the garlic cloves and grate the fresh ginger.

Step 3

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened and translucent.
