Ingredients

  • 500 grams large prawns, deveined and shells on
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 4 medium ripe tomatoes, grated
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon sweet smoked paprika
  • 2 tablespoons fresh parsley, chopped
  • 100 milliliters dry white wine
  • 150 grams feta cheese, crumbled
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 pieces lemon wedges, for serving

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Heat 2 tablespoons of olive oil in a large, oven-safe skillet over medium heat.

Step 3

Add the chopped onion and sauté for 3-4 minutes until softened.

Step 4

Stir in the minced garlic, and cook for 1 minute until fragrant.

Step 5

Add the grated tomatoes, tomato paste, oregano, paprika, salt, and pepper. Stir well and let the mixture simmer for 10 minutes until it thickens slightly.

Step 6

Pour in the white wine and let it simmer for another 2 minutes to allow the alcohol to evaporate.

Step 7

Stir in the chopped parsley and remove the skillet from the heat.

Step 8

Arrange the prawns on top of the tomato sauce in a single layer.

Step 9

Drizzle the remaining tablespoon of olive oil over the prawns.

Step 10

Scatter the crumbled feta evenly over the prawns and tomato mixture.

Step 11

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the prawns are cooked through and the feta turns slightly golden.

Step 12

Remove the skillet from the oven and let it rest for 2 minutes.

Step 13

Serve hot, garnished with additional parsley if desired, and fresh lemon wedges on the side.
