Ingredients

  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 115 grams unsalted butter
  • 200 grams granulated sugar
  • 3 large eggs
  • 240 grams Greek yogurt
  • 1 medium lemon lemon zest
  • 1 teaspoon vanilla extract
  • 30 grams powdered sugar

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch round cake pan and line the bottom with parchment paper.

Step 2

In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the unsalted butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.

Step 5

Mix in the Greek yogurt, lemon zest, and vanilla extract until well combined.

Step 6

Gradually add the dry ingredients to the wet mixture in three additions, mixing on low speed just until incorporated. Be careful not to overmix.

Step 7

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.

Step 10

Dust the cooled cake with powdered sugar before serving. Enjoy your delicious Yaourtopita with a cup of tea or coffee!
