Ingredients

  • 3 pounds beef chuck roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 medium (sliced) yellow onion
  • 4 minced garlic cloves
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 4 medium (peeled and cut into chunks) carrots
  • 4 medium (quartered) potatoes
  • 3 cut into chunks celery stalks
  • 3 sprigs fresh thyme
  • 1 bay leaf

Directions

Step 1

Season both sides of the beef chuck roast with salt and black pepper.

Step 2

In a large skillet over medium-high heat, heat the olive oil. Sear the roast for 4-5 minutes on each side until well browned. Remove and set aside.
