Ingredients

  • 1 cup Cornmeal
  • 1 cup Rye flour
  • 1 cup Whole wheat flour
  • 1.5 teaspoons Baking soda
  • 0.5 teaspoon Salt
  • 2 cups Buttermilk
  • 0.75 cup Molasses
  • 0.5 cup Raisins (optional)
  • 1 tablespoon Butter or vegetable oil (for greasing the can)

Directions

Step 1

In a large mixing bowl, whisk together the cornmeal, rye flour, whole wheat flour, baking soda, and salt until well combined.

Step 2

Add the buttermilk and molasses to the dry ingredients and stir until just blended. If using raisins, fold them in gently at this stage.

Step 3

Grease the inside of a 1-quart cylindrical metal coffee can or similar heat-safe container with butter or vegetable oil.

Step 4

Pour the batter into the prepared container, filling it no more than 2/3 full to allow room for the bread to rise.

Step 5

Cover the top of the container tightly with aluminum foil to prevent water from seeping in during the steaming process.

Step 6

Place a large pot on the stovetop and set a steaming rack or an upside-down small heatproof dish in the bottom.

Step 7

Add enough water to the pot to reach just below the steaming rack or dish, then bring the water to a gentle boil.

Step 8

Carefully place the covered container with the batter onto the steaming rack or dish inside the pot.

Step 9

Cover the pot with its lid and lower the heat to maintain a steady simmer. Steam the bread for 2 hours, checking occasionally to ensure the water level does not drop too low. Add more boiling water as needed to maintain the water level.

After 2 hours, check the bread by inserting a skewer or toothpick into the center. If it comes out clean, the bread is done.

Remove the container from the pot and let it cool for 10 minutes. Carefully run a knife around the edges of the bread and gently slide it out onto a wire rack to cool completely.
