Ingredients

  • 500 g Chicken thighs (boneless, skinless)
  • 120 ml Soy sauce
  • 120 ml Mirin (Japanese sweet rice wine)
  • 60 ml Sake
  • 2 tbsp Sugar
  • 1 clove Garlic (finely grated)
  • 1 tsp Ginger (finely grated)
  • 2 Green onions (optional, for garnish)
  • 1 tbsp Vegetable oil
  • 8 Wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces, approximately 2-3 cm cubes.

Step 2

In a small pot, combine soy sauce, mirin, sake, sugar, garlic, and ginger. Heat over medium heat until the sugar dissolves and the mixture slightly thickens, about 5-7 minutes. Remove from heat and set aside to cool. This will be your yakitori sauce.

Step 3

Reserve about 60 ml (1/4 cup) of the cooled sauce in a separate bowl for basting during grilling.

Thread the chicken pieces onto the soaked wooden skewers, leaving a small amount of space between each piece for even cooking.

Preheat your grill or grill pan to medium-high heat and lightly grease it with vegetable oil to prevent sticking.
