Ingredients

  • 2 pieces Boneless, skinless chicken breast
  • 0.25 cup Soy sauce
  • 0.25 cup Pineapple juice
  • 2 tablespoons Brown sugar
  • 1 clove Garlic, minced
  • 1 teaspoon Ginger, minced
  • 4 pieces Flour tortillas (8-inch)
  • 2 cups Shredded lettuce
  • 1 cup Shredded cheddar cheese
  • 1 cup Diced tomato
  • 0.25 cup Ranch dressing
  • 0.25 cup Taco sauce
  • 2 tablespoons Fresh cilantro, chopped (optional)

Directions

Step 1

In a medium bowl, combine the soy sauce, pineapple juice, brown sugar, minced garlic, and minced ginger to create the marinade.

Step 2

Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal or cover and refrigerate for at least 1 hour (or up to overnight for stronger flavor).

Step 3

Preheat a grill or grill pan over medium heat. Remove the chicken from the marinade and let any excess drip off. Discard the marinade.

Step 4

Grill the chicken for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove the chicken from the grill and let it rest for 5 minutes before slicing into thin strips.

Step 5

Warm the flour tortillas in a dry skillet, microwave, or oven until soft and pliable.

Step 6

To assemble each taco, place a layer of shredded lettuce on the center of a tortilla. Top with sliced chicken, shredded cheddar cheese, and diced tomato.

Step 7

Drizzle with ranch dressing and taco sauce. Garnish with fresh cilantro, if desired.

Step 8

Fold the tortilla around the filling to form a soft taco. Repeat with the remaining tortillas and fillings.

Step 9

Serve immediately and enjoy your delicious Yaki Soft Tacos!
