Ingredients

  • 4 large russet potatoes
  • 4 tablespoons unsalted butter
  • 0.5 cup whole milk
  • 1.5 cups sharp cheddar cheese
  • 3 cups fresh spinach
  • 0.25 cup fresh parsley
  • 0.25 cup fresh chives
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Peel and chop the potatoes into evenly sized chunks. Place the potatoes in a large pot and fill with enough water to cover them by about an inch. Add a pinch of salt and bring to a boil over medium-high heat.

Step 2

While the potatoes are boiling, heat the olive oil in a skillet over medium heat. Add the garlic (minced) and sauté for about 1 minute until fragrant, being careful not to burn it.
