Ingredients

  • 400 grams slender bamboo shoots (fresh or canned)
  • 200 grams ground pork
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1.5 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 0.25 teaspoon white pepper
  • 2 stalks green onions, finely chopped
  • 0.5 teaspoons sesame oil

Directions

Step 1

If using fresh bamboo shoots, peel away the tough outer layers and cut them into thin julienne slices. If using canned bamboo shoots, drain and rinse them thoroughly before slicing them into matchstick-like pieces.

Step 2

Heat 2 tablespoons of vegetable oil in a wok or large frying pan over medium-high heat.

Add the minced garlic and ginger to the wok and stir-fry for about 30 seconds until aromatic.

Add the ground pork to the wok and stir-fry, breaking it into small pieces with your spatula, until the meat is fully cooked and lightly browned (about 3-4 minutes).
