Ingredients

  • 500 grams daikon radish (white radish)
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons light soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 0.5 teaspoon dried chili flakes
  • 1 clove garlic, minced
  • 2 stalks green onions, finely chopped
  • 1 teaspoon roasted sesame seeds

Directions

Step 1

Peel and julienne 500 grams of daikon radish into thin, even slivers. Place the slivers in a large mixing bowl.

Step 2

Sprinkle 1 teaspoon of salt over the radish slivers and gently massage to distribute the salt evenly. Let the radish sit for 10 minutes to draw out excess moisture.

Step 3

After 10 minutes, rinse the radish slivers under cold water to remove excess salt. Drain thoroughly and gently press to remove excess water. Set aside.

Step 4

In a small bowl, combine 1 teaspoon of sugar, 2 tablespoons of light soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, and 0.5 teaspoons of dried chili flakes. Stir until the sugar dissolves and ingredients are well mixed.
